Enchilada

Casserole

by

Mary Wurtzel

Mary

Wurtzel is the first lady of the NFB of Michigan. She is also a Federation leader

in her own right. She says, "This recipe has the stamp of approval of our

oldest son Fred, who is a Johnson-and-Wales-trained chef."

Ingredients:

3 cups boneless chicken breast, cut

in bite-size pieces

1/2 cup onion, chopped

Minced garlic to taste

Oil

1 small package tortillas, torn into

bite-size pieces (the original recipe says flour, but I have used corn.)

1 can cream of mushroom soup

1 can cream of chicken soup

1 can mild green chilies, chopped

1 can Rotel tomatoes, if desired (I

don't)

Shredded cheddar cheese for topping

Method:

Brown the chicken breast and onions in a small amount of oil. Add garlic to

taste. Mix together with the remaining ingredients. Place in a 9-by-13-inch

pan and bake at 350 degrees till bubbly (about thirty minutes). Sprinkle shredded

cheese over the top and return to oven briefly to brown.

Fred

Wurtzel

Bolachingas

by

Fred Wurtzel

Fred

Wurtzel is President of the NFB of Michigan. He reports that this is a simple

family recipe.

Ingredients:

1

cup flour

2

eggs

1 cup milk

1 teaspoon vanilla

Method: You can vary

this to accommodate the number to be served. Mix ingredients together and

then fry. These are like thin crepes. For a treat we cook them in butter.

Some like to roll them with cinnamon and sugar inside. Others like cottage

cheese and jam--whatever suits your fancy.

Method:

Combine all ingredients well and bake in a 9-by-13-inch pan for about an hour

or until mixture is bubbly. Allow to stand for a few minutes before serving.
